Asian noodles are way ahead of pasta in terms of variety :-) Italian
pasta should be made with Durum wheat while Asian can use rice,
buckwheat, etc. I guess Marco Polo did not bring back all the varieties
:-)

Ha! I celebrated and didn't even realize it. I had a big bowl of Pho at a
local Viet-Thai place last night.

The better Pho places around DC only sell various sorts of Pho and
possibly, a few appetizers like Spring rolls. My favorite place uses two
different types of noodle in the same bowl.

In Italy, pasta is also made with buckwheat, as in the pizzoccheri alla
valtellinese or in the traditionally-made Venetian bigoli. Also, much
of the "fresh" egg pasta is made with soft-wheat flour.
