Thread: What to do with canned sweet potatoes?

    Default What to do with canned sweet potatoes?

    Just moved into apartment and found several cans of sweet potatoes
    left behind by the previous tenents. Best before date is quite a ways
    away. Never had sweet potatoes before, let alone canned. Any ideas for
    recipes using this stuff. Please, I already thought about boat
    anchors.

    Hehehe. Check the cans and see if they have any type of sugar added. If no
    sugar added they can make a rather nice soup on a cold day.

    Unless you want something fancier, just heat and eat. Add a pat of
    butter and mash. Some salt and pepper. Good with ham or pork or poultry.

    Put the in a baking dish, maybe dust with nutmeg. Cover with
    marshmallows (lots of marshmallows) and bake. Somebody will eat them.

    Do a web search for "canned sweet potato" recipes. I just open the can,
    heat them up and eat them but you can make candied sweet potatoes, etc.
    with them too.

    Sweet potato pie; mash canned sweet potatoes and use in your favorite
    pumpkin pie recipe.

    But have you considered door stops?

    You might take a look at the labels to see what's in them. The ones
    I've had have so much sugar in the heavy syrup that I just don't like
    them, even though I like sweet potatoes baked in the oven. But it won't
    hurt to try, just make sure there is room in the garbage for the
    leftovers! Put them in a covered saucepan and heat until warm. Serve
    as a side dish.

    Just remember, there must have been a reason why the previous tenant
    left them there!

    Use them to make fried potato pancakes! Mix with a bit of egg and rice
    flour, and black pepper. Sweeten if that is what you like (I don't) and
    fry in a bit of your choice of cooking oils.

    Lately, I use a lot more coconut oil than Olive oil. OO used to be my
    main one.

    They'd also work for sweet potato pies.

    I don't get it. Why do people ruin perfectly good sweet potatoes with
    sickeningly sweet MARSHMALLOWS?!!?? The very concept makes my teeth
    hurt. :-P

    They are sweet enough by themselves.

    For sure, I always hated them because the usual serving method was with
    sugar and marshmallows. All they need is to be roasted until the gooey
    sugar starts dripping out.

    I love roasted sweet potatoes, with just butter and salt, no sugar or
    marshmallows. I even eat most of the skin if they are cooked in a real
    oven (I peel them if microwaved.) I have some friends that are Puerto
    Rican and they mix sliced bananas and sliced sweet potatoes and bake
    them (no sugar) and that's really good.

    I don't understand the marshmallows either, but I assumed the canned
    SP's were too sweet already, so might as well put them over the top! ;-)
    At least I didn't say to drizzle them with maple syrup first and THEN
    cover with marshmallows.

    More likely plantains with sweet potatoes

    Plantains might be more authentic, but these were plain yellow bananas
    from KwikTrip or Cub Foods. :-) (They are 2nd generation from Chicago
    and Peoria, and pretty americanized.) There was a lot more SP than
    banana, and maybe a little butter, salt, and allspice or nutmeg. Very
    simple dish; it really might have just been SP's and bananas.

    I've gotten into fried plantains. "Fried" is a bit of a misnomer
    because what they really want is gentle sauteeing in not much
    oil.

    I use olive oil and a bit of sea salt and they come out perfect...
    IF I've picked a good plantain at the correct stage of ripeness.
    So there's some luck involved, but the preparation is easy.

    Indeed!

    If you bake them by themselves, they will leak their own "sugar".

    Lately, I've been peeling them raw then pressure cooking them plain with
    a bit of water. Drain, mash, and serve as a savory dish with a bit of
    salt and butter like regular mashed white potatoes.
