    Default WEHT canned clams

    I used to keep canned clams in the pantry for fettucine and clam sauce
    as a favorite emergency food. Used them up, put them on the shopping
    list, and have now failed to find any at three different markets.
    Where did they go? Why? Are they coming back? -aem

    I sure hope they haven't vanished from here. I add them to Campbell's
    Chunky NE Clam Chowder. I also add butter and black pepper. I don't
    refer to that practice as "cooking."

    They are on the shelf at my Stater Bros. market, last time I needed.
    I regularly use them to make chowder from a scuba diving class' recipe
    book (in place of the abalone called for) for a PickyBest ever clam
    chowder.

    The resataurant supply store has big old cans of them. Whole or
    chopped, and a very good brand (SeaWatch).

    Are "WHET" a specific kind or brand of clam? DRY clams are not good.
    I prefer WHET ones.

    WHET = "What ever happened to..." (my guess)

    We sometimes use frozen clams for our pasta and clam sauce creations.
    These are Manilas, in their shells, flash frozen in clear vacuum packs.
    Each pack is a pound of clams, just about right for one serving, with
    pasta. You can put the packs into boiling water, or cut them open and
    drop the contents (clams in shells plus some extra juice) right into
    your sauce.

    More expensive than the canned stuff, but I think these are uncooked and
    fresher tasting. And serving the clams in their shells is a fancier
    looking presentation.

    Cindy and I also like to make clams in black bean sauce, inspired by a
    favorite menu item at some of our local Chinese restaurants.

    The frozen clams are obviously a convenience, too. Toss a couple of
    bags into the freezer, and you can have your linguine con vongole on a
    moment's whim, without a trip to the fish market.
