Wedding menu (long)
Dear Son was married this weekend in front of a small group of about 30
closest friends and relatives in Breckenridge, Colorado, an authentic
Victorian mining town turned ski resort .It was a lovely ceremony, a
beautiful bride and a very handsome, proud groom.
The ceremony was followed by a cocktail hour with tapas on the patio of
a local restaurant in an old Victorian house (Cafe Alpine for those who
know the area), and dinner indoors. The menu:
Tapas:
oriental barbecued lamb with vegetables in phyllo cups
small pizza squares with fresh tomato and shredded basil
a cheese and fruit tray including Humbolt Fog goat cheese
duck canapes with lingonberry mousse
The specialty of the open bar was raspberry margaritas with Chambord
Salad course was choice of classic Caesar or Gorgonzola salad with mixed
greens, heirloom tomatoes, and garlic-red wine vinaigrette
Entree choices:
Wasabi-crusted sea scallops with Harusame noodles and Japanese vegetable
salad, yuzu-avocado mash and orange ponzu sauce
Lemon-thyme marinated Niman Ranch pork chop with wild mushroom stuffing,
broccolini and Marsala drizzle
Pepper rubbed medallions of beef tenderloin with cilantro pan-roasted
Yukon gold potatoes,Santa Fe chili relleno and prickly pear sauce
Buffalo mozzarella & heirloom tomato Napoleon with grilled vegetables,
truffled mushroom pasta and Bearnaise vinaigrette (vegetarian entree)
Dessert choices:
Chocolate and peanut enchiladas with Mexican chocolate sauce and
cinnamon ice cream
Tropical fruit ambrosia over macadamia sweet bread with coconut cream
and guava honey
Key lime tart with ginger-graham crust and Sailor Jerry Rum Punch sauce
Duo of sorbets; raspberry and mango with housemade biscotti
Wines were an Italian pinot grigio and a Calif. pinot noir
An open house was held the following day for about 100 friends and
co-workers in the couple's back yard. Microbrew beers, wines, and a ton
of finger food. A great time was had by all.
