Some of the 'essential range' potatoes we recently bought in Waitrose, after
roasting in the oven and then placing in the fridge for a couple of days;
are turning a black colour in the inside. It doesnt appear to be affecting
the taste.

Could anyone say what is going on here? Presuamably they are still alright
to eat?
