Has anyone noticed a change in consistency in V8 Juice over the years?
It seems thinner to me now than it used to be.

No - and dh is a V8 addict of many years, so I guess he's a pretty
good judge. I can't stand the stuff myself. I just wish the stores
would stock more of the low sodium variety - they're the first to go.

Maybe it's just in my mind. I know that some people need or prefer the low
sodium variety, but I can't stand the taste. I do, however, like the Hot
and Spicy variety in addition to the regular one.

I've never had the low sodium but like both the regular and Hot and Spicy.
I've not noticed any difference in the consistency of it. I drink it
almost every morning. Could be because I drink it pretty fast with some
fresh ground pepper in it

Not really, but I purchase the low sodium version. It's more expensive.

The only time I buy it is when I want to use it as a base for vegetable or
veggie-beef soup.

Regular V8 seems the same to me. Low sodium tastes sweet - it's what I
should drink, but I just can't. I like the lemon stuff and I usually
add lemon or lime (and Worcestershire) to the regular, anyway. I
don't drink the hot/spicy stuff because the Worcestershire adds a more
complex flavor kick. I haven't tried the plus calcium V8, but maybe
you'd find it "thicker". Calcium fortified skim milk feels more like
whole milk to me, but calcium added OJ is kind of chalky. Having said
that, I'm a cheapskate and most of the time I buy the store brand at
half the price, especially if I'm going to cook with it.
I made a terrific "ratatouille" soup the other day. Vegan too! No
eggplant (yuk) but yellow summer squash, zuchinni, onion, bell
peppers and fresh green beans with mediterranean - type herbs and a
little olive oil. Fast and EZ.

Why would it be more expensive, I've never noticed any low sodium
products priced differently from the regular products... perhaps you
should shop elsewhere. V8 is way over priced anyway, as are all
tomato juices... it's very easy to make your own from tomato paste
(that's the base for all tomato juice), there is no salt added to any
brand of tomato paste. You can make a better tasting version by
tailoring the seasonings to your own liking - you can buy dehy
vegetables and make your own - cheap, you can also control the
viscosity. I never buy tomato juice (why carry those heavy cans/
bottles home), it's so simple to make it myself, and at less than half
the store price, all I need is a can opener and 30 seconds.
Did you know that V8 contains beet juice... I always have lots because
I like canned beets. I have dehy onions, bell pepper (red n' green),
parsley, powdered celery seed, carrots, celery too. But I don't try
to copy V8 exactly, I prefer to make a tomato vegetable juice to my
own taste, for one I like a bit of dillweed and garlic powder... I
like to add a few drops of hot sauce. a squeeze of fresh lemon, and
finish up with a few ounces of vodka.
To a glass of plain tomato juice add a tsp of canned tuna water and
it's darned close to Clamato.
I have most of the dehy veggie ingredients with my spices, I'm sure
most people who cook do... not gonna miss the lettuce and water cress
juice.

Sometimes we've had threads on likes and dislikes that don't make sense.
V-8 is a classic example for me. The thought of drinking it cold
makes me gag. The thought of using it for the broth in a vegetable soup
or a beef stew is delightful. I do that all the time.
Cabbage-tomato soup with V-8 is excellent.
Beef stew with onions, sweet potatoes, carrots, turnips and mushrooms in
V-8 base is another favorite around here.

Too much salt too unless you are purchasing the "no salt added" beets.

I don't care for cabbage combined with tomato except in stuffed cabbage
rolls. I do like V-8 as base for several things, though. A little bit in
stew, chili, things like that.

I like hot tomato sauce on pasta, and I like that dish cold the next
day. I like tomato juice heated as a base for soup and stew, but cold

back a couple of vodka martinis. Gawd was I sorry the next day. I think
my drinking will be reserved to a couple of drinks once a year or every
other year. The hangover was horrible.
