Uses for Soy Milk?
A good friend is lactose intolerant. She visits each year, and each
year I buy a quart of soy milk to have in the house for her. We use it
for her french toast or whatever else she'd like.
Jim and I have no problem with dairy milk. We use it for drinking and
all baked goods.
Each year I'm left with nearly a quart of unused soy milk that I end up
throwing away.
Any ideas on what we might use it for? I'm not thinking of recipes
where you substitute soy milk for dairy milk. I'm looking for recipes
where soy milk is the only way to go, where soy is the preferred
ingredient, where dairy milk wouldn't work or wouldn't be as good.
The product in my refrigerator is SILK brand plain soy milk.

There is no valid use for soy "milk" *shudder*. Tell your friend to buy
the Lactaid milk like the rest of us.

This is really NOT an exciting suggestion but I used to use soy milk
to make smoothies... banana, frozen peach or raspberries, a little
vanilla or maple extract, ice, soy milk. Very good, if you like that
kind of thing, but probably not what you're looking for in a recipe.

I keep that stuff around so I don't have to deal with company.

I suspected this would be the best answer I'd get. I'll go pour that
quart of soy milk down the drain now. Thanks.

Personally, I would use it. Soy milk tastes pretty good to me.
