Default Upside down Au Gratin - the correct term for this?

Hi RFC Taxonomy/Terminology experts,

What's the term for "on a hot, oiled pan, scatter bread crumbs, let
them brown, and then add the next food item that will be accented with
these lovely crunchy brown morsels of yum?"

Gratin? Saute? Browning? Some other cool foreign word?
