Default Turkey Day tips


Anybody have any really great recipes or tips for thanksgiving?? I'm
cooking it alone for the first time this year and I just hope it all
works out okay.. I plan to keep the meal simple but I'm still a bit
worried

In my search for good tips I found this.. 'Holiday Videos'
(http://www.wholefoodsmarket.com/holi...deos/index.php) So now I
know how to make a really good gravy and carve the bird. Anyone else
have any tips for me on having a successful thanksgiving?

1. Take a deep breath.
2. Drink a glass of chilled white wine.
3. Stop worrying a turkey @ 325 is damn near foolproof.
4. Don't make the potatoes too early - they turn gummy.
5. Don't forget to let the turkey rest before carving.

6. Enjoy the company they are more important than any meal.......

*Too much liquid turns potatoes gummy too. I never worry about making
them too far ahead. It hasn't happened yet.

Make sure you have a full bottle of wine to start...maybe even two, or
three!!

Cook turkey in bag. Shortens cooking time and turkey doesn't dry
out.

Roast a capon, goose, ducks, or chickens instead of turkey. Then you can
*really* enjoy the meal.

Cornish hens are a pretty easy/good option also.

method plus it saves cooking time.
