Default turkey broth

I roasted the bones and whatever meat was left on them, it has been frozen
from last year. I cooked it overnight in the slow cooker and now the
strained broth in cooling in the refrigerator. I am going to freeze it in a
plastic bag. Should I defat it first or just put the whole thing in the
freezer? I will be using it for dressing, I think. I forgot to mention that
this is a turkey carcass.

A turkey from last year? If it developed any off-flavors
in storage, it probably will be from oxidation of the
fat, so defatting would be a good idea.

Defat it while it's cold so you can spoon the fat off.. Taste it and reduce
it to where you want it. Then freeze it. I defat in a separator funnel. It's
a good investment.
