haughty and high faluting, check out Dorrie Greenspan's recipe for
Chicken In A Pot.

She encourages you to experiment with ingredients so it should be
right up the alley of many here. In my personal opinion the veggies
can be varied a lot more than the herbs..... -aem

First thing I'd do is switch out prunes for dried apricot.
