Default Tonights Desert

Had a BBQ tonight with some scotch fillet and had been anticipating it
much of the day
so much I thought why not do an old familiar not much eaten dessert
even if it is hot here
So I made a little Apricot steamed pudding ala ginger and bourbon



Serves four or maybe five well feed

Measure Ingredient
1 cup Chopped dried apricots
½ cup Orange juice
100 grams Butter
¾ cup Sugar
1 Egg
1¼ cup Flour
2 teaspoons Baking powder
½ cup Brown sugar
1 tablespoon Cornflour
1 cup Apricot and apple juice

I used Splenda instead of sugar

used gluten free flour as it's what I had

I used a small can of Apricots due to not having any dried and threw in

some home made apricot jam to make the volume

a 1/2 teaspoon of Ginger and a double shot of bourbon for flavour

drop into a suitable bowl and steam over simmering water until the top

colours and the centre in a few cm is still slightly sticky on a test probe

I also used the juice from the can instead of Oj

it's still a fantastic taste imho server with fresh yogurt on the
front porch watching the Sunset .

Mix the Brown sugar corn flour and apple apricot jiuce together and
run over the cooking mix after its well heated which tends to make it
self saucing
Light tasty and flavoursome , it might even be sorta healthy

I am a fan of dried apricots, so this sounds very good. Thanks.
