supper tonight
well last night I cut up 2 chickens into chicken pieces...go figure.
And rubbed them in a spice mix of dark brown sugar, salt, aleppo pepper,
sweet paprika, 5 spice powder and orange peel.
Just now I put them in my gas smoker @250 F , I figure to give them maybe 3
hours.

That sounds like it would be good on a roasted chicken too.

I'm gonna make a chicken salad outa enough parts to equal 1/2 chicken
(sliced and diced). The other chicken and 1/2 will be designated as supper
at work meals during next week.
Going to include things such as mandaran oranges, celery, radish, shallot,
red bell pepper and walnuts and dress it with some homemade canola oil
mayo...1 egg, cup of oil, some lime juice, salt, pepper and a tad of
mustard flour....no garlic this time. This should produce 2
servings...supper tonight and lunch tomorrow.
I've never tried smoked chicken salad before but it seems like a killer
idea. And it will keep the house cool.

I am going to do that also with my leftover roast chicken. I had meant
to take part of it to me to work, as in sandwiches. But I have been
exhausted with the conditions at work lately...and working overtime,
so that idea went by the board. No interest, no energy to make
sandwiches.
But I am now off for a day or so, before I do the official nursing
orientation this week..so I am thinking Cobb salad...and that will use
up my lefover chicken.

Yeah, that does sound like a great idea. I might do that also in the
next few weeks.

Not a clue....But the salad was nice.
I've had smoked chicken before and it is good...but I smoked this for
mostly suppers at work during the up coming week.
