Subbing brown rice
I'm subbing brown rice for white in a Paella type dish where normally the 2
cups of uncooked white rice recipe takes 4 cups of water along with the
other ingredients.
My questions is, how much more water should I add when using brown rice?

I usually add an extra cup of water with brown rice and it works. All I
eat is brown rice. Takes a little longer to cook but is worth it. My
favorite way is to put the dry rice in a pot with a little oil in it and
stir it around over the heat until it gets a nice nutty smell then add
the water and proceed from there. YMMV

It depends entirely on the variety of brown rice. Bown basmati
takes less water than California short-grain. With the latter,
sometimes 2.5 cups of water per cup of rice is necessary.
Between 2 and 2.5 is usually safe.
