Strawberry Soup
Cold fruit soups are an unexpected but welcome prelude to a light
luncheon featuring seafood or chicken salad

2 cups fresh strawberries
2 cups unsweetened pineapple juice
1/3 cup confectioner's sugar, sifted
1/2 cup burgundy or other dry red wine
1/2 cup sour cream
Garnish: whipped cream, sliced strawberries, mint leaves

Place strawberries in food processor or blender, puree. Add
pineapple juice and sugar, process until smooth. Add burgundy and
sour cream, mix well, chill. Garnish with whipped cream, sliced
strawberries and mint leaves.
