    Default Sides that compliment eggplant??

    Can someone suggest a couple of sides that would go well with breaded
    eggplant?

    stewed tomatoes (perhaps with okra, yum!)
    linguine with garlic and olive oil

    I concur! I saw some wonderful okra pods at the farm stand today. And
    eggplant. Nice tomatoes, too. (It's too damn bad I can't eat any of those
    things.) Toss the linquini with some herbs, too, and given all that you've
    got a good meal!

    dollope of sourcream,
    slaw.

    A glas of wine, perhpas a bit of soup and a green salad?

    Im assuming you have a nice sage and onion gravy for the aubegine?

    Some bread and fruit if still hungry add a bit of cheese?

    There is a half forgotten divide in culinary class structure.

    A la paysan or la bonne fem is often a one pot or meal dish, the
    tendency to serve several distinct types of foods at any given meal is
    an aristocratic affectation rapidly and early adopted by the middle
    class in its upwardly mobile pretentions.

    Thus you have middle class americans and european eating at one meal a
    varity of foods orignialy only served at aristoractic banquets where the
    host was showing off his wealth by producing an needless abundance,
    thus: meat and 2 veggies.

    I wouldnt hesitate to serve a nice chop and potatoes with it, a la
    voison or even Anned

    A nice bit of fish, a side of pasta with a nice buerre noir sauce?

    I often make a salad for a meal, so about the only time i cook eggplant
    any more is during the winter holidays when a nice eggplant parm. is
    routine, though im very fond of Moussaka and i will occasionaly just
    flour and egg a slice or 2 of an Japanese eggplant and quickly saute in
    hot oil & garlic, but by and large i dont serve composed meals of
    several different varities of foods, and favor the one pot meals.

    I make an eggplant lasagne that is very nice and that i would serve with
    a green salad. So i guess i would probly just serve a salad with the
    fried eggplant and make sure it had a nice sauce with it.

    A lot depneds on the way you seasoned your breading.
