I would never alter a traditional recipe to use only a favorite nor
exaggerate too much, but I think the flavors I appreciate most are
cumin and thyme any time and in summer fresh basil.

I don't, and probably will never, know which I prefer between fresh
basil and fresh parsley. Fresh oregano also is very nice, but basil and
parsley are my favorite ones

Italian (flat leaf) parsley is different from bland curly parsley.

Curly parsley is the stronger of the two, IMO. Bland, no? Not bland
enough.
