Default SCORE! :) Wild rice

Recently, I shopped for wild rice and learned first-hand 'sticker
schock'!!!!!! OUCH! More than $16/lb!!!! I mean - Youchers! Dang!
Wild rice prices up there with raw meats???? I'll take the meats at
those prices!

Anywhoo, I was recently gifted with about four or five pounds of the
good stuff when/after my folks travelled and visited the Minnysodda area
(think Mayo clinic & Rochester?)!!! After the mathmatics were done, it
was figured that wild rice bought in its region was about $6/per pound -
sure beats $16+/lb!!!!

My favorite place (Northland Native American Products,
http://www.northlandvisions.com/) has increased its prices but it's
still the best I've ever had. Unfortunately, their website stinks.
Nice part is that they're right next door to Maria's Cafe. Yum.

I'll cook a pound of it tomorrow. Haven't decided if I'll offer it up
totally plain or with some toasted and buttered slivered almonds. If I
put anything like mushrooms or green onions in it, my SIL won't have
any. Hmmmmm, that gives me an idea. 8-)

Two words: Trader Joe's

I can't compare what they sell to the "real" stuff because I won't pay
the asking for "real", but TJ's wild rice is pretty good.

Don't you just love it when everyone assumes there's a TJ's down the street?
I've never seen a TJ's anywhere. I have to drive 10 miles just to get to a
grocery store.

Wild rice is wonderful but yes, it's (usually) very pricy. Here's a nice
recipe for herbed wild rice:

White & Wild Herbed Rice

1/4 c. uncooked wild rice
3/4 c. uncooked long-grain white rice
3 Tbs. butter or margarine
1 Tbs. dried parsley
scant 1/2 tsp. bottled Kitchen Bouquet sauce
1/4 tsp. dried basil
1/4 c. diced celery
1 small onion, minced
2-1/2 c. chicken broth
1/2 tsp. salt
1/4 tsp. rubbed sage
4 oz. canned sliced mushrooms*

Preheat oven to 350 degrees. In saucepan, melt butter and cook and stir
wild rice, celery and onion until vegetables are tender (*or 1/4 c. fresh
sliced mushrooms, sauteed with the celery and onion if not using canned).
Pour into ungreased 1-1/2 to 2 quart casserole. Heat broth to boiling.
Pour over wild rice mixture. Stir in parsley, salt, bouquet sauce, sage,
basil and mushrooms. Cover and bake 45 minutes. Stir in white rice. Cover
and bake until all liquid is absorbed, about 40 minutes longer. Remove from
oven and let stand covered 5 minutes. Stir well before serving. Serves 8

Wild rice is also very good added to cornbread dressing to go along with
poultry or pork.

Never had onion, mushroooms or celery in wild rice.

It works. I'd make the mushrooms fresh, substitute brown rice for
white, leave out the herbs, celery and Kitchen Bouquet. Other than
that, the recipe looked fine to me.

I cooked my pound of wild rice this morning. It's the real deal -
lake-grown, hand-harvested, hand-winnowed, parched in the traditional
Native American way. I did my usual
boil-the-hell-out-of-it-and-then-drain-it method and it was done in 15
minutes. Quality Control testing took about 3/4 cup to determine it is
as perfect as anticipated.

I still can't decide about the toasted almonds, though.

Wild rice is one of those things, like champagne, where the investment
in the good stuff really pays off. Trader Joe's wild rice will be a
very pale imitation of the wild-harvested Minnesota wild rice.

I think they are mixing up wild rice with TJ's wild rice mix. I
prefer the TJ's wild rice mix over the straight stuff.

I'll have to give roasted almonds in the wild rice a try. I've never
had the wild rice that way before. Sounds really good.

I find straight wild rice to be a little over powering and cook it with
white rice. I prefer to buy the wild rice and add white rather than pay
wild premium prices for the mix.

Toasted or sauteed pecan pieces are nice, too, Sky. And then, of
course, there are the mushrooms and chopped green onions. Too much of
that stuff, though, and you're adulterating a wonderful dish that is
quite special even when it is served plain. I like plain.

BTW, I picked up some slivered almonds this afternoon -- even though I
have known for weeks that tomorrow is a holiday. <=8^P

I'm sure that is so, but I don't buy top of the line champagne
either. Actually, I tend to buy prosecco, because I prefer it. There's
no way in Hades I could afford to buy real wild rice in the quantities
we use it (on rare occasions) when we do use it. So, I get the farmed
stuff from TJs. It adds the color and nuttiness we are looking for,
though I'm sure it's not nearly as good as the real thing. We buy the
best we can afford, and in this case, that is what we can afford.

Around here the mix is less expensive than pure wild rice, but a heck
of a lot more than plain white rice. It is much cheaper to buy the wild
rice and add it to white yourself.

Have you tried it with brown rice instead of white?
