Sure. Take a recipe for dill salmon and substitute tarragon for dill.

Tarragon also goes well on roasted poultry. Mix some with butter (or
chopped chicken fat) and stuff it under the skin over the breast meat,
then roast.

Salt/pepper to taste over the top of the bird.
