Yum. Crepes spread with preserves, folded or rolled over sweetened
ricotta filling, covered with warm chocolate sauce.
Or crepes filled with sweetened ricotta and a warmed preserve (apricot,
peach, or raspberry) spooned over. Save the chocolate for another use.
I've posted my recipe for warm stuffed crepes with apricot sauce here
in the past.

Oooo! Sounds luscious. I've never made a mousse with ricotta so will have
to look that up. I like this.

I always used leftover ricotta in brownies. I'd add a bit of lemon or
orange extract and marble it in like you would in cream cheese brownies.
You could marble the fruit in as well.

How about ricotta cheesecake? If you want chocolate, make the bottom
a chocolate cookie crust.
