REC: Simple mushroom, rice and lentil soup
This improvised soup was what was for dinner. I did not measure
anything.
Simple mushroom, rice and lentil soup
sunflower oil
1 small onion, chopped
brown mutton mushrooms, sliced
Thai jasmine rice (this was what I had on hand; the type of rice does
not matter much in this dish)
a couple of cups of mixed chicken and beef broth
red lentils
2 garlic cloves, finely chopped
salt
pepper
cumin
garam masala
Heat the oil in a saucepan, sweat the onions in it, add the mushrooms
and fry for a few minutes. Add the rice and the broth and let cook over
low-to-medium heat for 10 minutes. Add the lentils and cook for about
10 minutes longer or until the lentils are ready. When the lentils are
almost ready, add the garlic and the seasonings.
