REC: Pineapple Cheesecake
Pineapple Cheesecake
2 cups graham cracker crumbs
1/4 cup sugar
1 stick unsalted butter (1/4 cup)
2 eggs
8 oz cream cheese
1/2 cup sugar
crushed pineapple, drained
whipped topping
Melt the butter.
Mix the graham cracker crumbs with 1/4 cup sugar.
Add the melted butter and mix well.
Press this mixture into a 9 inch pie pan, forming a graham cracker
crust.
Beat the eggs, cream cheese, and 1/2 cup sugar together, mixing
thoroughly.
Pour this filling into the graham cracker crust.
Bake at 250° for 20 minutes.
Spread crushed pineapple (use the amount which seems right to you)
over the filling.
Cover with whipped topping and garnish lightly with graham cracker
crumbs.

I wonder if you could make a caramelized-pineapple cheesecake. I had an
amazing pineapple upside-down cake with caramelized pineapple. It was
delicious.

You'd probably have to caramelize the pineapple first since it would
need a higher temperature than the cheesecake.
I used to be able to buy either pineapple or cherry cheesecake with
the fruit on the bottom, under the cheese filling, not as a topping.

Cherry clafouti is popular.
Hell, I'd eat cherry anything.
Hard to find fresh cherries though.
I guess I'll have to drink cherry juice.
Too bad George Washington chopped down all those cherry trees.

I'll have to settle for cranberries, instead of cherries.
Cherries aren't berries at all. They're pitted fruit, like plums, peaches,
and apricots.
Maybe I'll use dried cherries.
