Oatmeal Muffins
Makes 12 muffins.

1 cup oatmeal
1 egg
1/2 cup shortening or butter, melted
1 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk
1/2 cup brown sugar
1 cup flour
1/2 tsp salt

Soak the oatmeal in the buttermilk for 30 minutes.
Add the egg and beat well.
Add the sugar and mix well.
Add the shortening.
Sift the flour, salt, baking powder, and baking soda together.
Add the sifted ingredients.
Fill muffin cups or greased muffin pans 2/3 full.
Bake at 400 F for 15 to 20 minutes.
