REC: Easy and Quick Yummy Cake
I think this took me about 5 minutes to measure, mix, and get into
the pan, then the oven.
Recipe from allrecipes.com submitted by SNOWWHITE34.
Yellow Cake
1-1/2 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking powder
4 eggs
1 cup Canola oil
3/4 cup orange juice*
2 teaspoons orange zest (my addition)
2 teaspooons vanilla extract
Preheat oven to 350°F. Grease and flour a 9x13 inch pan.
In a large bowl, mix together the flour, sugar, and baking powder.
Make a well in the center and pour in the eggs, oil, orange, juice,
orange zest, and vanilla. Mix well with whisk and pour into prepared
pan.
Bake in the preheated oven for 45 minutes, or until a toothpick
inserted into the center of the cake comes out clean. Allow to cool.
I used the following frosting...
1/2 cup unsalted butter, softened
3 cups confectioners sugar
2 teaspoons orange zest
1 teaspoon vanilla extract
2-3 tablespoons orange juice*
Cream butter. Gradually add remaining ingredients, beating until
mixture is creamy and spreadable. Spread evenly over top of cake.
*NOTE: The only orange juice I had on hand was the "Simply Orange"
brand orange juice with pineapple. It gave the cake and frosting a
really nice flavor.

I rarely ever do. There is one cake I bake that includes a "lemon
supreme" cake mix in the list of ingredients, but there are a lot of
additions. Can't remember when I've used any other mix.

No, the point was that he didn't use a mix, and this cake recipe
looks very easy (if that is what one wants). I am increasingly
interested in easy recipes, having given up my lengthy kitchen
puttering long ago.
