Oh, my.

What I don't get is how that's easier than using mushrooms (even
pre-sliced, if you want) and sour cream. It certainly doesn't look like
it would be better tasting.

Stroganoff isn't cubed, that's stew. Stroganoff meat is sliced into 1/8"
strips, across the grain. I also feel flank steak works better than beef
round but that's more because my Sainted MotherT preferred using that over
any other cut.

Why not use regular sour cream (or crème fraîche) since you're already using
onions?

Clan Ranger uses rice (usually Basmati) as the base.

Cubed is fine with me, but yes, it's more stew than anything else. I
would strike the word "stroganoff" entirely. Stroganoff normally uses
tenderloin, and is barely cooked. This recipe calls for cooking in a
crockpot.

That's right. With a capital "G". And a capital "C", as in:

Campbell¹s® Condensed Soups

Where's the gold? I think it's one of the colors on the label.

But, but, but...noodles are better!

I was astonished, one day, to see the Galloping Gourmet serve his
stroganoff over french fries!

Beef Stroganoff is almost always cooked with filet mignon, thrown into the
dish at the very last minute so it's rare. I sometimes use leftover standing
rib roast cut transversely across the grain in strips so it falls apart in
your mouth, even if you're semi edentulous. Thank God I'm not.

Stroganoff using tenderloin? That's the classical method of doing the
dish. Stroganoff using tenderloin is done to order in some
restaurants. Other restaurants make Stroganoff with a tougher cut and
hold it for serving. When I make it, I use a tougher cut, and simmer
it until tender. Beef tongue is also good, I kid you not. Simmer the
tongue until tender. (I simmer in water, lemon and bay leaf, onion and
cloves) Peel. Slice. Brown in butter. Make a mushroom sour cream
sauce and simmer the tongue (preferably in the oven) until done.
Outstanding! Serve over rice or other great starch.

So all other recipes should bear a different name - especially those
containing canned soup and dips!

NO IT LOOKS DISGUSTING!!! Why not just eat a salt-lick?

I don't know what that glop is, but don't call it Beef Stroganoff. And
how is that "easier" than the real thing? It looks like something
Sandra Lee would make. The real thing is simple, uses only 5 simple
ingredients (6 if you include the noodles) and takes only about 15
minutes once all the slicing is done.
Below:

Beef Stroganoff Recipe with Beef Fillet, Butter, Onions, Mushrooms &
Sour Cream.

INGREDIENTS

1 lb Filet of Beef
1 1/2 Medium Onions
4 oz sliced Mushrooms
1 oz Butter
1/8 Pint Sour Cream
Salt & Pepper

Slice the Beef into 2in strips - the thickness of your finger. Slice
the Onions thinly.

Over a low heat melt half the Butter (with a tad of Olive Oil) in a
Frying Pan and add the Onions. Sauté until they are soft and
transparent. Do not burn. Add the sliced Mushrooms and sauté for a
minute or so until they are soft and coated with the juices.

Spoon out the Onions and Mushrooms into a dish.

Add the remaining Butter to the Frying Pan and allow it to get very
hot - so that it froths. Drop in the Beef strips and fry briskly on
all sides. The Beef really needs only to be browned and not over-
cooked in the middle. A couple of minutes at the most.

Return the Onions and Mushrooms back into the Frying Pan. Season well
with Salt & Pepper. Add the Sour Cream and cook at the same heat for
another minute so that the Cream reduces to a syrupy consistency.

Serve at once.

15 minutes-- vs 4-8 hours. which would you rather eat???

Interesting discussion about stroganoff. Yes, classic would be with beef
tenderloin. Yet if I buy a beef tenderloin I do not want to smother it
with mushroom sauce. I make a very good beef stroganoff with whatever
cheap, lean roast I can find on sale. By cutting it thin and cooking for an
hour or more, it is very tender and flavorful. I have never cared for the
quick stroganoff recipes using canned soup. Classic stroganoff is so easy
to make. I do like lots of fresh mushrooms in mine. They sweat down to a
fairly low volume. I just use the recipe in my old Betty Crocker cook book
and add a little more garlic. It is always a hit.

Where do you get these ghastly recipes? Sounds like a load of shit
