Forget what passes for "apple fritters" in bake shops these days.
This is the real thing.

Apfel Kuchlein (Apple Fritters) - an Amish recipe
This recipe is based on one found in _Mary at the Farm and Book
of Recipes
Compiled during Her Visit among the "Pennsylvania Germans"_ by
Edith M.
Thomas (1915).

4 large, tart apples
2 Tbsp brandy
1/2 tsp cinnamon
1/2 tsp sugar
1 cup flour
1/2 tsp baking powder
1/4 tsp salt
2 eggs, separated
1 cup milk

Pare and core the apples.
Cut each apple into about 4 round slices.
Place the slices in a dish containing the brandy, cinnamon and
sugar.
Let stand for two hours.
Beat the egg whites until they are stiff.
Sift the flour and baking powder together.
Mix the flour, salt, egg yolks and milk.
Mix well until you have a smooth batter.
Mix in the egg whites.
Drain the apple slices.
Dip the slices in the batter.
Fry in hot, deep fat until light brown.
Drain.
Sift powdered sugar over the fritters.
