REC: Albertle (Rolled butter cookies)
Albertle (Rolled Butter Cookies) - a German recipe
This recipe was metric (we use a kitchen scale for that), but we've
converted the measurements here.
3 1/3 cups flour
1 1/4 cup sugar
1/2 cup butter
2 1/8 cups corn starch
3 Tbsp heavy cream
2 Tbsp baking powder
1 tsp vanilla extract
1/2 tsp salt
Cream the butter with the sugar.
Add the eggs and vanilla and mix well.
Add the cream and beat well.
Sift together the flour, sugar, corn starch, baking powder and salt.
Slowly add the sifted mixture while beating slowly.
Work the dough with your hands on a floured surface.
Chill the dough for an hour.
Roll into a thin oblong.
Press the fine side of a box grater on the dough to give it a pattern.
Cut into small squares.
Bake at 350°F for 12 to 15 minutes.
