Metal gears for sure, whether pro model or used. I have both a tilt and fixed head model; I prefer tilt for the more frequent additions of cookie ingredients and the stand for breads. I have a breakfast bar but I still haveto pull those out from under the counter no matter which I use.

I haven't noticed any differences based on which size batch I do until I try to put double stiff batches in the tilt head/5qt.
