Another use: I like blue cheese on burgers, not alone, or with bacon, but
with a topping of green chiles plus sauteed onions and mushrooms and some
chipotle or habanero cheese. No bun, just burger with a lot of toppings.

I'm not a fan of bleu cheese but I've seen recipes with it stuffed
inside a burger. Might be good for other cheeses.
