Chorizo is what leaped to my mind also. Thinly-sliced pork or chicken would
work well instead if you wanted the focus of the pizza to be the chiles.
After taking the pizza out of the oven I might squeeze lime juice over it
and sprinkle with cilantro. I think bell peppers might detract from the
flavor of the Hatch chiles. Corn might be nice.

Corn and black beans were additions I thought about; but, decided that might
be too much of a good thing. But, I'm now thinking "how could you have too
much of a good thing"?

Personally, I'd add Sausage of some kind and sliced mushrooms, and maybe
some sliced black olives, but those happen to be some of my personal
favorite toppings too.

IMHO when it comes to pizza toppings, nearly anything goes. <g>

Chorizo (the Mexican kind, not Spanish) or a little bit of roast or
barbecued pork or dark-meat chicken.

Maybe some thinly sliced *fresh* jalapeño or Serrano peppers if you like
some heat.

Do you have any kind of tomato sauce? (it wasn't mentioned but might be
implied)

I've had pizza with pesto sauce instead of tomato sauce, onions,
hot peppers and soft cheese. Very nice. Exactly which type of
pepper and soft cheese makes for nice variations.

Wheat intolerant guy says - Two different recipes for wheat free
pizza crust are in the cupboard waiting to be tried. One is rice
based the other quinoa based. Every so often I find a soy based
wheat free crust - Not as good as homemade but wheat free
pizza isn't exactly trivial to find.

Tonight I'm ordering out for pizza. A place nearby does a "no
dough" option that uses a layer of sausage pressed out in a
crust shape. Pepperoni and olives.

The first thing I thought of was pork. Chorizo would probably be
excellent. A little cilantro would be good and I agree about the bell
peppers. Not sure about the corn.

Not peperoni...wouldn't taste right. Carne asado/adovado. For sausage,
use Mexican-type chorizo. Sliced tomatoes would go well too.

Thanks for the great ideas. I thought about chorizo and cilantro, but I
never thought about BBQ pork, sliced roma tomatoes or corn & black
beans. Bob is right about leaving out the bell peppers. I like koko's
idea, that the chiles should be the star of the show. The wisdom in
this group is awesome. :-)

No. Spread it out on the pizza that way any bulk 'normal' sausage would
be spread. It cooks just fine at pizza-heat.

maybe you're right, but mexican chorizo seems to have more fat than
'normal' bulk sausage.
