Pickled Herring salad
I whipped up a Pickled Herring dish for a recent pot luck. It was easy and
I had plenty of compliments.
1 pint of pickled herring . ( I used my own ) recipe called for 12 0z.
1 pint of Sour Cream I like the Mexican style
1 onion sliced thin
1 granny smith apple peeled and diced
1/4 cup vinegar I eyeballed it, it may have been closer to 1/2 cup
let set overnight.
the salad was a little runny. Next time I will cut back on the liquid

We make a similar dish (usually for Christmas) but with the addition of
pickled beets and sometimes cubed cooked potatoes. Rather than vinegar,
we add a bit of gherkins or cornichons fine-diced. It's all good
