Opah!
Our local fishmonger reports fresh opah available this week. I think
I'll buy some, sauté it in butter, and serve it simply with sweet corn
relish (maybe with water chestnuts added, if Whole Foods has fresh water
chestnuts).
In honor of Black History Month I'll call the finished dish "Opah Winfrey."

It's a great fish. It must be utterly fresh to be impressive. I would
not grill the fish, but for sure I would grill the fishmonger. :-)

How much? Dressed and skinned? I bought a fillet once, and the skin
was thicker than the meat it seemed.
