NUT BOAT COOKIES
Dough:
6 tbsp butter
1 c all purpose flour
1/3 c granulated sugar
3/4 c almonds, grated
1/4 tsp lemon rind, grated
1 egg yolk
Filling:
2 c walnuts, ground
1/2 c granulated sugar
Pinch of cinnamon
pinch of cloves
1/2 c warmed cream
extra granulated sugar, or
chocolate icing (optional)
walnut halves (optional)
PREPARATION
Preheat oven to 350°F. Combine butter, flour, sugar, almonds, lemon
rind, and egg yolk amd work into a dough.
Roll out dough to a scant 1/4" thickness. Press into nut boat tins,
2"-3" long, shaped like boats. Reserve enough dough to cover the tops.
Fill with walnut filling, prepared by mixing all ingredients together
thoroughly. Top each boat with thin cover of reserved dough, pressing
edges together.
Bake at 350°F for about 10-15 minutes. Turn out of tins and sprinkle
immediately with sugar, or let cool and top with chocolate icing and
decorate each with a walnut
