Default New things to do with Thanks Giving leftovers

Anyone have any posts in regards to using leftovers in creative ways?

1. Cut long strips off a turkey breast, keeping the strips as uniform as
possible. Weave the strips into a basket. Fill basket with boiled balut.
Serve with vinegary hot sauce and beer.

2. Cut thin strips of turkey. Brush strips with egg white. Sprinkle each
strip lightly with ground cloves, then sprinkle generously with grated
orange peel and coarse salt. Put strips onto a Silpat-lined baking sheet and
bake at 200°F until completely dry and leathery. Serve during a football
game.

3. Cut thin fairly-short (say 3 inches) strips of turkey. Heat peanut oil in
a wok over high heat. When oil is hot, add an aggressive amount of
finely-minced garlic and ginger. Cook until you can smell the strong aroma
of garlic (should only be a few seconds if the oil in the wok is hot), then
add bamboo shoots and sliced bell pepper. Stir-fry until bell pepper starts
to get tender, then add turkey strips. After about three seconds add
leftover green bean casserole to thicken. Cook while stirring until heated
through.

4.(part 1) Soak corn husks. Make masa for tamales. Finely chop an onion and
an habanero chile. (Wear gloves while handling the chile!) Heat oil in a
sauté pan over medium-high heat. Add chopped onion and chile, sprinkle with
salt, and cook until onion is softened. Scoop filling out of leftover
pumpkin pie and mix thoroughly with the onion and chile. Spread masa on corn
husks, putting a tablespoon of the pumpkin mixture on each. Enfold the masa
and filling with the corn husks, tie to secure, and steam the tamales.

4.(part 2) Cut the remaining pie crust into pieces, brush with oil, sprinkle
with garlic salt and Chihuahua cheese, and put into a 350°F until crisp. Use
as croutons.

5. Pretend that leftover stuffing is scrapple, and do with it whatever
unholy things you do to scrapple.

Those creative enough for you? What else ya got?

Freeze leftover turkey meat until Dec. 23, then look up a recipe for
turkey in black mole (pavo en mole negro) and serve it for the Day of
the Radishes, a Oaxacan fiesta. -aem

I normally freeze leftover turkey. Never considered a "mole", but thanks
for the idea. :-)

soup. There are so many choices available.

Turkey Divine

Make a white sauce and blanch some broccoli. Put layers of broccoli,
turkey and white sauce in some sort of oven safe dish, top with grated
Parmesan cheese and bake.

I rarely make different dishes from Thanksgiving turkey n' fixin's...
I tend to consume it all as it is. For brunch today I ate a baked
sweet potato in its jacket, cold from the fridge. For lunch I nuked a
soup bowl filled with kasha varnishkas and gravy. Then for dinner I
sliced some turkey breast for my cats and I gnawed on the 2nd
drumstick. There should be enough for tomorrow and maybe Sunday
too... then it's over. I don't try to figure out what to do with
roast turkey other than to eat it as it was originally meant to be
eaten.

I used to like to make a turkey cottage pie but we had a capon this year.

Small bird only 8 pounds will make a nice stock when stripped but that's
about it.

Thanks Becca.

I really wanted to hear the ideas you have, so that when I go to
re-purpose my own Turkey, I have new ideas.

I also hope that others have ideas to add. I had not considered a
Mexican twist (quesadillas) to my left-overs. Thank-you.

Did it say, "Genuine Surgical Capon" on the wrapper? I used that as a
song title. It was about castrating a fellow who raped the
protagonist's little sister. When I was a kid, I remember all capons
saying, "Genuine Surgical Capon," and thinking, "What other kind of
capon is there?"

I'm with you on this one. Making other dishes with the leftover turkey just
extends the agony. We have cold sandwiches for lunch and hot turkey
sandwiches with leftover mashed potatoes and gravy for dinner and finally
turkey pot pie to finish the gravy and bits of turkey. Then cook up the
carcass for soup and freeze the broth for later.

This recipe for Turkey leftovers "Rollovers", http://alturl.com/qtdd came
on my morning news.

Recipe and video of the segment are there.

The Leftover Tip following the recipe seems a TAD out of place.

Use "Half & Half" and add some cheese (1/2 cup of grated cheese for 1
cup of H & H) to the "H & H" as you heat it up.

Of course, sprinkle some on the top after assembling also.

It did not have a "wrapper" they sit, naked, next to the stewing hens,
which, for some reason do come in a plastic bag
