Need help with salad to accompany chili
I'm making chili for the Oscars (my annual) and looking for a different
salad. Sometimes I make a Greek salad but this year I'm thinking a
composed salad on a platter....base of shredded red cabbage for color
then shredded carrots, sliced tomatoes, artichoke heart, hearts of palm,
water chestnuts and drizzled with a wine vinegar dressing. Any
additions, omissions or other suggestions? Any hints would be
appreciated and TIA.

It sound right except that you might consider having some chopped garlic
in the dressing.

If you're using red wine vinegar in the dressing the salad will have a
marked Italian character.
I would consider adding elements from your favorite antipasto. Little 1/2
round slices of salami & provolone. Maybe some garbanzo beans nice rounds of
red onion (rinsed lightly in red wine vinegar. Etc.
