Lunch: Baked fish tacos
Baked two mahi-mahi filets on lightly safflower oiled parchment paper at
350F three minutes per side. A few dots of Cholula hot sauce, served on
warm two flour tortillas. Added avocado, shredded Monterey Jack cheese and
deli cole slaw.
Mild flavor but tender and filling. Washed down with two ice-cold bottles
of Bud Light.
A rare and winning lunch.
