I posted a while back that I've been trying to find a low-fat, but not
low carb or low-calorie or low-anything-else cookbook. After some
trial and error, I found two that, between them, have given me a
variety of recipes that actually *taste good* but are low fat for the
DH's digestive difficulties. The better of the two is _The Everything
Low-Fat, High-Flavor Cookbook_ by Linda Larsen. The other is _1,001
Low-Fat Recipes_ by Sue Spitler.

Today I made "Caribbean Beef" from the former cookbook:

1 T. olive oil
1 onion, chopped
1 1/2 lbs. top round of beef, cubed
1 - 13 oz. can pineapple tidbits
1/2 cup water
1/3 cup apple cider vinegar
1/4 cup brown sugar
1/2 t. salt
1 T. minced ginger root
2 T. cornstarch
2 T. low-sodium soy sauce
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips

In a large skillet, heat olive oil over medium head. Add onion; cook
and stir for 3 mins. Then add cubes of beef; brown on all sides,
about 5 mins. total.

Meanwhile, drain pineapple, reserving juice. Remove beef from skillet
and add juice, water, vinegar, brown sugar, salt and ginger root and
bring to a simmer. Return beef to skillet, cover, and simmer over low
heat until beef is tender, about 35 - 45 mins.

In a small bowl mix cornstarch and soy sauce. Add to beef mixture
along with bell pepper strips. Cook and stir for 8 - 10 mins. until
sauce thickens, beef is very tender and peppers are crisp-tender.
Serve immediately over hot cooked rice.
