Thread: Leftovers again!

It seems my Sunday brunchs are in a rut. I make either omelets or
breakfast burritos from leftovers.

Today I had some leftover carnitas from dinner out Fri night.

Stan had the tamales, but he ate it all. Yes, all beans no rice.

I used rice flour tortillas.

Filled them with scrambled eggs, carnitas, potatoes fried with onion
and salsa. Sprinkled with a little queso enchilado.
