Late dinner tonight
I bought some beautiful thick cut boneless pork chops and froze most,
but kept out one for dinner. I butterflied it, pounded it flat and
S&P'd, stuffed it and rolled it up jellyroll style, tied it off and it's
in the oven now.
The stuffing is a small finely chopped apple, 2 slices of bread cubed
and toasted in the toaster oven with some sage and a drizzle of olive
oil, celery and onions sauteed in butter but not browned, barely a shake
of cinnamon, ground cloves, nutmeg, beef broth to moisten. I would have
added a little apple juice but I don't have any.
I put 3 small potatoes in with it to bake; one for now and two for
leftovers. I'm sure it's smelling good in here but I can't smell
anything yet. *sniff*

Yum! I ate cucumber maki from Safeway. Not enough to stay full - I'm
hungry again and thinking about what else I can eat now.
