I'm wrapping my Chocolate Covered Cherries in 4x4 foils, and despite
my best efforts I always seem to have a few "leakers",and I tasted a
bit of this 65% dark chocolate and a preview of the cherry juice
inside.............

The chocolate is the only difference. I think I may let popular
opinion choose.
I knows this, I have a BUNCH of them!! I wrapped them each in foil,
and I have them in two containers because I didn't want to pack them
too heavy in my traditional Tupperware "ham" thing that I normally
use!
Now I'm gonna have pasta with red sauce for a late lunch/early
dinner,cause I am all chocolated OUT! :-)

I would never toss chocolate out before tasting, unless it smelled
burnt! I have burned bowls of melting chocolate before by hitting
"full power| rather than "defrost"on the microwave! ;-)

Try nuking a small glass bowl full at high power for 10 mins! You'll

I'm pretty certain that I'll feel the same way. The filling is quite
sweet, and a high chocolate/sugar ratio seems very appropriate for the
coating, a coating that is balanced and worthy of the sublime
contents. All of your other candy is just OK--which is really a
compliment from me--except the toffee, which is perfect, but perfect
toffee just means not doing anything stupid.
John, your chocolate covered cherries are always something special,
and this year I expect that they will be exceptional. I've never
taken for granted your gifts of Christmas candy. It's a nice thing
that you do, year after year,

Only significant difference between compound coating and real
chocolate that I know of is the fat content. Cocoa fat (butter) vs.
palm oil or some other vegetable oil or fat. And while there are a lot
(most?) of crappy compound coatings, there is at least one I know of
and have tried that's pretty good:

I have NEVER burned real chocolate. I'm anally careful about warming
real chocolate very slowly so as to not break the temper.
