I was making a new york-style cheese cake and realized I'd forgotted to
add the sour cream to the cream cheese mixture. I grabbed it back out
of the oven and gingerly stirred in the sour cream, trying to be careful
not to disturb the crumb crust. My husband heard me muttering to myself
in annoyance so I was forced to confess what had happened, but if I
hadn't you'd have never been able to tell. After being baked and
chilled, if you looked very closely at a slice you could see a slight
difference in color near the outer edges where the sour cream hadn't
gotten stirred in but the texture and flavor were unaffected.

That reminds me of the time I was baking pumpkin pies the evening
before Thanksgiving, and forgot the eggs until the pies were in the
oven for 10 minutes. I began frantically beating the eggs, and trying
to stir them into the pie filling, while they were still baking. It
was hillarious, but it worked:-)

Absolutely pies are more forgiving. I would have never gotten away
with that, had it been a cake!

A few years ago I did a similar thing with a baked cheese cake. I forgot
the sugar and didn't realize it until after it had been in the oven for
a few minutes. I took the now warms plate out of the oven, sprinkled the
sugar evenly over the top and then used a hand blander to beat it into
the cake.
It worked. The cake turned out okay.

I also forgot to mix the chopped walnuts into the batter til after it
was in the pan. Those I dumped on top, then pushed em in with a
wooden chopstick.
What? Me, forgetful?
I've seen recipes where you have to wait to add the nuts. I'm sure
you did it on purpose that way!
I bet those would taste good on top of some ice cream!
