    Today Popeye's in Brentwood has a one day only special, 8 pc for
    $4.99. Their Spicy rules.
    First day of physical/occupational therapy. Ouch (I assume).

    Ahh, you've upgraded? IIRC you were using the no-temper couverture blend
    last time I noticed, and I do notice when you talk chocolate.

    I've just acquired my first molds and will be attempting something more
    adventurous than round truffle balls.

    Have you ever made a dulce de leche ganache for truffles?

    IIRC if it requires tempering then it *is* really chocolate.

    Um, yes it is. The kind that needs tempering for dipping, else be
    warmed very slowly as I do fir the Chocolate Covered Cherries. I
    bought a lb to see what it was like. Not as good as I get from
    Chocolate Chocolate Chocolate, IMHO. But pretty good.
