Hey, Greg! Healthy Bread in Five Minutes a Day is released today

I'd go to the signing tonight but I have to go to my book group instead.
Feh. The link above is to Jeff's post on making the Master Recipe -- a
whole wheat/all-purpose flour combo.
I mixed up half a batch on Sunday and baked it yesterday and we're
loving it. It makes a fine tuna melt sandwich. Not as high as I'd like
it, but it appears the recipe I was using had an error in it. The
recipe I'm posting has the correction in it.
Master Recipe for Whole Grain Bread from "Healthy Bread in Five Minutes
a Day"

Recipe By: Zoë Francois and Jeff Hertzberg
Ingredient amounts in parentheses are for half a batch (2 loaves).
5-1/2 cups whole wheat flour (2-3/4 cups)
2 cups all purpose flour (1 cup)
1 tablespoon kosher salt (1-1/2 teaspoons)
1-1/2 tablespoons granulated yeast (2-1/4 teaspoons [or 1 packet])
4 tablespoons vital wheat gluten (2 tablespoons)
4 cups lukewarm water (2 cups)
Whisk the dry ingredients together, then pour in the water. Mix well
with a spoon, let rise on counter for two hours; refrigerate, loosely
covered, several hours or overnight.
Shape loaf, let rise 90 minutes.
Preheat oven and stone to 450 degrees for 30 minutes. Recipe says middle
rack of oven, but mine do better one level lower than middle.
Brush with water, sprinkle on seed mixture if you're using a seed
mixture; slash and bake; slide onto stone; pour 1 cup hot water into
preheated broiler pan in oven to create steam.
Bake 30 minutes.
Notes:
Mixed the dough for the first time 10-24-2009; will bake on Monday.

Zoe is on Twitter, and I responded to something she said about the new
book, a few weeks ago. I told her that I knew she knows you...and
said that I "knew" you . She says she adores you!
She has been giving tantalizing hints about the new book on Twitter,
mentioning some addicting sounding recipes. I will get the book when
I get to the bay area... Just too many books to pack right now..LOL. I
think I am going to have to get another bookshelf when I get there...
I am looking forward to this new book, although I can get terrific
bread in the SFBA.

THIS book? It's just out today. Amazon's been shipping since
yesterday, I believe.

MOF, I think they're there within the next couple days to record
something on WGN-TV. Whole Foods should have VWG. Read the

I've got two Cambro containers, a 6-quart and a 4-quart that will be
here on Thursday. Ordered from webstaurant.com -- more reasonably
priced than any other i found.

I think mine is a 6 quart. I got it at Surfas, in Culver City, the
last time I was there. Don't remember how much I paid for it, but the
prices are on their website.

A friend of mine has the book and loves it, she makes LOVERLY rye bread...
I'll look at Zoe's website, maybe she'll be in the Chicago area soon, I'd

a cake mix box.

I saw their appearance on the WGN noon nooze yesterday, very nice! They had
a book signing somewhere's out in the 'burbs last night...
