Grilled eggplant
What do you put on your grilled eggplant? I know they need to be brushed
with olive oil.... but what else is used to flavor them other than salt and
pepper?

I was thinking of a light sprinkle of parmesan cheese. My family says
they're too bland with just oil, salt and pepper. I just picked up some
McCormick brand "Parmesan Herb" blend. I think I'll try that. ;^)

My family likes a lot of flavor in their food. A lot of seasonings. I should
tell them to grill dinner themselves. :^D

A thick coating of ground cayenne or habanero chiles should help them
out. Lots of flavor in there for the first few minutes.
Seriously, I often dust a little cayenne powder on the oiled eggplant
or, at the last minute, a little Parmesan or other cheese.

Depends on what else is being served. A light sprinkling of cumin helps
eggplant meld with Mexican or Indian cuisine. If it's something from the
Eastern Mediterranean (Greek, Turkish, or Lebanese) or Morocco, a very light
sprinkling of cinnamon after the eggplant comes off the grill. If you're
grilling eggplant to have with other grilled vegetables, then a squeeze of
lemon juice can brighten it up.

Try a sprinkle of garlic powder or garlic salt.

That will work nicely! I also like to add Bacos. Horrid stuff actually I
know but we like them on this one item.
