Thread: Green chile chicken stew

    Default Green chile chicken stew

    With carrots, celery, a little bit of diced potato, pressed garlic,
    cumin and salt. I'm going to make rice for the non-low carbers. It's
    good'n hot. Everything is in but the chicken. I'm baking thighs to
    cut up into it.

    I also picked up 11 ~2# bags of frozen chicken wing tips to last me
    over the cold months.

    Big Jims. I'd had them in my fridge for over two weeks, and some of
    them were getting a tiny bit soft. I'd bought 10 pounds of them at
    Whole Foods. They got a huge shipment from Hatch. I seeded them,
    then used the Cuisinart to slice them, and stewed them in some chicken
    broth I'd made two days earlier from the back portions cut off of some
    leg quarters.

    I've grown those before; they had tough plasticky skins. I hope yours
    were different, or else you roasted and peeled them too.

    I stewed them for quite a few hours. They eventually soften.

    Generally speaking, Anaheim or Hatch type chilies have a tough skin.
    You either have to roast and steam them to remove the skin or let them
    ripen and roast and then grind. Unless of course you cook the
    bejeebers out of them.

    DIL gets several cases each fall and roasts and peels some and the
    rest get hung indoors until ripe and dry and then roasted and
    pulverized.

    Which kinda describes Hatch peppers as well. I learned not to put
    them into a soup or stew/braise without peeling them first. They
    really muck up dish - tough skins and they look ugly, too.
