I like the simple sound of it. I'm turned off when I see a
slew of ingredients, especially condiments I might use only once or
twice a year. Simple food is better anyway. How do you make the stew
you toss the cut up baked thighs into? If it's too detailed please
don't feel obliged to post it. I do the same - my cooking is limited
but I make a few things nicely - using some ingredients cooked
separately and tossing them in and nobody notices the difference
unless maybe in a good way. I'm all for piecemeal cooking. I've
slung things together with stuff made separately in the broiler, on
the stovetop, and in the microwave. Whatever works. Anyway, the
chicken thing of yours sounds good on the basis mainly of the simple
and non demanding recipe.

Why not in the winter months too? One would think that the free range
chickens would also have frozen wing tips at that time.

Or brought inside, in which case they're no longer free range. They have giant pens on wheels that they more every day or two.
