Certainly looks good enough to please, darlin'. From a co-worker's
bring of what she calls "Brownie Cups" this past week, I am
experimenting today with some Cups of my own. Hers were made from a
chhocolate brownie box mix, as directed for the mixing, poured into
mini-muffin tins, baked and depressed (with whatever that tart maker
thing is called) while still hot so as to cool into cups. Then she
filled the cups with a mix of 1 cup fudge frosting (purchased) and 1
cup Cool Whip for a mousse swirl into each. Turned out just a bit
chewy, like brownie edges are, and quite good.
I am making similar, but with my very old carrot cake recipe, and with
crushed pineapple added to my fresh made cream cheese frosting so that
it will be a little mousse-like, though dense. To make the cake part
less "fluffy" and more like a brownie I have added more than the usual
2 cups of carrot and an extra egg, plus I beat the base mixture
longer. We'll see how this experiment works, as I am about to begin
the baking now....Picks

That sounds nice... if the carrot cake is tough enough to hold up to
the squishing process. I'd be afraid that it would just crumble...

No, perhaps it's because they are pressed while hot, and I also be
sure to not put too much dough in each cup. They need to bake up just
a little rounded on top and not spreading beyond the top edges. They
came out quite good. But making over 90 of those wee things was far
too long a time on my feet for one baking session!
