Finally Got My Blue Book!
Lowe's had it for $5.06. (weird price) I can see why you all said to
get it. What a cool book! I dug the canning set out of the basement
and brought it up. I paid 10 bucks for it a couple years ago and it
doesn't look like it was ever used. I'll need to get a jar lifter
though. I didn't get one at Lowe's because I wasn't sure what I all
had. Louise got bored with me talking about doing this and gave boxes
of jars away last year but I did find a few cases of small ones. Over
the weekend I'll go get some quart jars and stock up on lids.
I've got a little more reading to do but I'm excited to finally be
almost ready to start doing something new.

Hope you have some farmers markets or roaside stands near you. Grab
that wonderful summer fruit and produce and go to town !!
Canning is such fun and you get to enjoy the fruits of your labors in
the cold months.

In my experience, pints jars are more practical when canning for two
people but of course you know your needs best.

This is from their website some years ago. They've done a massive
overhaul recently and it may not now be there:
Zesty Peach Barbecue Sauce
Recipe By: Ball website - freshpreserving.com
Makes about 8 (8 oz) half pints
6 cups finely chopped pitted peeled peaches
(about 3 lb or 9 medium)
1 cup finely chopped seeded red bell pepper
(about 1 large)
1 cup finely chopped onion (about 1 large)
3 tablespoons finely chopped garlic (about 14 cloves)
1 1/4 cups honey
3/4 cup cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons hot pepper flakes
2 teaspoons dry mustard
2 teaspoons salt
8 half pint glass preserving jars with lids (8 oz)
and bands
Prepare boiling water canner. Heat jars and lids in simmering water
until ready for use. Do not boil. Set bands aside.
Combine all ingredients in a large saucepan. Bring to a boil. Reduce
heat and simmer, stirring frequently, until mixture thickens to the
consistency of a thin commercial barbeque sauce, about 25 minutes.
Ladle hot sauce into hot jars leaving 1/2 inch headspace. Remove air
bubbles. Wipe rim. Center hot lid on jar. Apply band and adjust until
fit is fingertip tight.
Process in a boiling water canner for 15 minutes, adjusting for
altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid
should not flex up and down when center is pressed.
Notes: 8-2-2007. Made 11 half pints. Used 1# dried aps, cooked soft
and milled, plus about 2-3# fresh apricots. Used some liquid smoke and
about a cup of molasses, a few drops George's hot sauce. Pretty good
stuff.
