Favorite pancake mix? Favorite pancake fruit addition?
What's your favorite pancake mix? I'm addicted to morning pancakes and have
been searching for the best pancake mix. I'm much too lazy to mix
ingredients. At the moment mine is Target's Buttermilk Pancake mix. It rises
more than most during cooking, giving it a delicate light texture, and it
tastes good. I've been adding thin slices of very ripe bananas. What's your
favorite fruit addition to pancakes?

I make up a big batch of the dry ingredients, store in a glass jar.
It saves time, money and you know what's in there. I just add an egg
and a cup of yogurt and the batter is ready to go. I do this too with
my muffin and biscuit mix. I also did it with a brownie mix, but
they became TOO easy to make, if you know what I mean - for anyone
watching calories.

raspberries best.
If you don't like complication in the morning, You could measure the dry
ingredients the night before, and just add the eggs and milk and oil in
the morning. A little more work, but you had to get the cup measure
dirty anyhow 
My mom used to do this when we went camping.

Never heard of waffles and peppermint chocolate chip ice cream and
chocolate syrup?
MAYBE had strawberries underneath. Done waffles a ton of ice cream ways!

You could also measur the milk, oil, and eggs in a cup the night before,
cover and store in the fridge.
For that matter, pancake and waffle batters hold up well in the fridge
overnight. You could make the whole thing the night before.

My mom always did that with her sourdough mix. Make it up the night
before...

When my children were little, I did the same. Do you remember the
Make-a-Mix Cookbook and the More Make-a-Mix? Those books were useful,
but you could do it with your own recipes.

This is a great idea! (I've been on a pancake kick lately, first one since I
was in college. I always make my own, if only because I usually eat them so
rarely I don't have any mix.) I like mine with butter and powdered sugar.

Aaah, another fan of sugar and lemon juice on pancakes! That's how my
mom served them and I never acquired a taste for syrup. It's a really
tasty combination on blueberry pancakes too!

No mix suggestion (we don't eat pancakes often enough to use up a box of
packaged mix before it stales, and prefer scratch), but blueberries,
especially fresh, are a really nice addition. Peaches, nectarines,
thinly-sliced apples or pears are really good, too.
