    Default Edamame appetizer? Need Help!

    Hello all,

    I have been bad and bought a lot of frozen edamame from Costco. Now
    I'm tired of eating them out of the shell and need to do something
    else with them.

    I've seen edamame dips - does someone have a good recipe for that? Or
    some other easy appetizer that uses edamame as the main ingredient.

    Why an appetizer? Sometimes I'll have boiled edamame as the main
    dish.

    I recalled that Alton Brown did some different stuff with edamame.

    Yeah, stupid Google Groups will probably trash that URL. I found it
    by going to foodnetwork.com, searching for edamame, and narrowing
    it down to "Good Eats".

    Why make anything with edamame? It's fun to squirt out the soy beans
    (which is what they are) from the pods with your teeth. Frozen edamame
    from Trader Joes are as good as those served in Japanese restaurants and
    one serving can be nuked for 30 seconds to be quite ready.

    I enjoy edamame on a green salad. I have seen, but not tried, edamame
    bruschetta -- the edamame is mashed with olive oil, lemon juice,
    garlic, etc.

    I love it best eaten right out of the pod. It's a great movie night
    snack.

    Just felt like a new appetizer, I guess. It's summer and I wanted
    something cool, so that seemed to fit the bill best.

    I checked that AB recipes, and one was a dip! Here it is, for those
    who are interested:

    Edamame Dip

    12 ounces shelled, cooked, and cooled edamame, about 2 cups
    1/4 cup diced onion
    1/2 cup tightly packed fresh cilantro or parsley leaves
    1 large garlic clove, sliced
    1/4 cup freshly squeezed lime or lemon juice
    1 tablespoon brown miso
    1 teaspoon kosher salt
    1 teaspoon red chili paste
    1/4 teaspoon freshly ground black pepper
    5 tablespoons olive oil

    Place the edamame, onion, cilantro, garlic, lime juice, miso, salt,
    chili paste and pepper into the bowl of a food processor and process
    for 15 seconds. Stop to scrape down the sides of the bowl and process
    for another 15 to 20 seconds. With the processor running, slowly
    drizzle in the olive oil. Once all of the oil has been added, stop,
    scrape down the bowl and then process another 5 to 10 seconds. Taste
    and adjust seasoning, as desired. Serve with chips or crackers. Store
    in an airtight container for up to 5 days.


    I may just have to try this.

    I like it that, too. But as I said in the OP i'm getting tired of them
    that way. (I bought several big bags!)
